We recently through a weeknight dinner together at a friends' house and it was so delish! It's a great menu for the holiday weekend that's healthy and crunchy and spicy and sweet and delicious. WHAT MORE DO YOU WANT?!
The Menu:
- Erin's Sweet and Spicy Chicken Skewers
- Amy's Crunchy Agave Nectar Salad
- Fart Brownies (No, that's not a typo. Explanation later.)
SWEET AND SPICY CHICKEN SKEWERS
Ingredients:
- 4 bonesless skinless chicken breasts, cubed
- 1/4 Cup Honey or Agave Nectar
- 1/3 Cup Soy Sauce
- 1 Tsp Extra Virgin Olive Oil
- 4 Garlic Cloves
- 1/4 Cup Sriracha Chili Sauce
- (If you're using low-sodium soy sauce, you'll also want to add a 1/4 tsp of salt to this recipe.)
- 6 Skewers
Cube your chicken and put into a large ziplock. In a small bowl, combine all the other ingredients and then divide in half. One half is for marinade, and the other half is to brush onto the chicken as it grills. Pour the marinade into the ziplock with the chicken and let it sit for about a half hour (at least. The longer the better.) Skewer your chicken.
Spray the grill with some non-stick cooking spray (we use Canola) and grill the skewered chicken on medium-high heat, occassionally brushing the chicken with more marinade.
Close the grill between brushings. Cook the chicken 4-5 minutes per side, or until cooked through.

FART BROWNIES
I know, it's not the most appetizing name for a brownie recipe. But when you make brownies with black beans, it's the inevitable truth. Taking a dose of Beano before eating these delicious mo-fos is recommended.
Ingredients
- Your favorite boxed brownie mix
- 1 can of black beans, drained and rinsed, and returned to can
After you rinse your black beans and return them to the can, fill the can with as much water as you can. Pour the bean/water mixture into your food processor and go to town on it. Blend until smooth.
Add the bean mixture to a mixing bowl with your boxed brownie mix. Combine.
From here, just follow the instructions on the package for baking. Do not add any of the ingredients that the box recipe calls for such as eggs, water or oil. The only two ingredients in this recipe are the dry brownie mix and the beans mixture.
Later in the Evening...
I am a chocolate lover. I'd go so far as to say I'm a chocolate expert. I love dark chocolate, milk chocolate, chocolate kisses, chocolate cake, chocolate frozen yogurt, you name it. So when Erin suggested this brownie recipe, I was skeptical to say the least. Beans? IN CHOCOLATE? No freakin way that's going to taste good. But I'll be honest. They're pretty damn good. The texture is very different than a regular brownie. They're a little more dense. But the flavor is just as sweet and decadent. So I recommend giving it a try.
Erin decided that the brownies were, in fact, TOO healthy, and decided to sandwich them around some roasted marshmallows. Do you see why I'm friends with this woman???
The Beans Will Make You Fart
I think Erin's reaction best describes the experience you'll have after eating these delicious brownies. On my way home that evening, I texted Erin two simple words: "Fart Brownies." The next morning, she told me she was laughing so hard she was in tears, but then when she woke up the next morning, it wasn't funny anymore.
