I can't say that there's much in the way of "tradition" in my house, unless we're talking about Tuesday nights. What's for dinner? Tacos! Oh yeah, duh, it's Tuesday.
Last week I made a simple turkey taco recipe that I'd like to share with you. Here's what you'll need:
AMY'S FAVORITE TACO INGREDIENTS
- Ground Turkey (Use whichever fat content you like best. I prefer 7% fat.)
- Yellow or White Corn Tortillas
- 1/2 Cup Canola Oil
- Non stick cooking spray
- 2 Tbsp. Chili Powder
- 2 Tsp. Cumin
- Salt & Pepper to taste
- 1 Red Bell Pepper, Chopped
- 2 Cups Fresh Pineapple, Chopped
- 1 Serrano Pepper, Chopped and Divided
- 1 Garlic Clove, Minced
- Sour Cream
- Organic Black Beans, Rinsed and Drained
- Salsa
PINEAPPLE "SALSA"
I keep it simple. First I chop up some fresh pineapple, and then I chop up some peppers, usually whatever I've got in the fridge. This particular evening I used a red bell pepper and half of a a serrano pepper. Make sure you remove the seeds from both peppers before you chop 'em up.
Time to Cook
I spray a nonstick skillet with cooking spray (I use Canola) over medium heat and saute the other half of the Serrano pepper and garlic clove. Then, I add my ground turkey, stir, and season it with salt and pepper, chili powder and cumin.
Fry Up Some Tortillas
Really, you should prepare your tortillas however you'd like. My favorite way is to add a little canola oil to a non-stick skillet over high heat, and slightly crisp the tortillas for about 15 seconds on each side, at the most. Cool the tortillas on a paper towel to soak up any excess oil.

Black Beans, Ground Turkey, Cheddar Cheese and Salsa is how my husband likes his tacos. Tropical fruit has no place on a taco for this guy.
